ROSEY ROSEHIP POPSCICLES

This was a two-toned popscicle! It had a tangy rosehip tip and the rest was more like a rose lemonade. Give yourself plent of time to make these because you will need the tip to freeze before adding the second flavour.

Making a simple syrup is actually simple: follow a 1:1 ratio of water and sugar. Cook down the mixture until it is a thicker, syrupy consistency. My advice when adding acids like lemon or lime juice - do it at the end. It tastes better!

  1. The rosehip tip was made from a simple syrup that included rose hips that were dehydrated, fireweed blossoms and pineapple weed. Whenever you are working with rose hips, be ready for the labor! When processing them from a fresh state you need to remove as much of the tiny seeds and hairs as you can. When making a syrup it is much easier, as you can strain the mixture through cheese cloth. I would recommend doing it more than once.

  2. When syrup is cool, add about an inch and a half to the popsicle mold and freeze.

  3. I also made a simple syrup with dehydrated rose petals for the rest of the popsicle. You can also use fresh petals. I also was not as focused on making a super thick syrup for this portion of the popsicle - more tangy and tasty. Once the syrup was done and cooled, I added tons of lemon and lime juice, slightly diluted it, and poured the rest in the molds - adding the stick.
